In our latest newsletter, I discuss some recent news regarding how the wholegrain Sorghum has been modified using biotechnology to contain higher levels of beta-carotene and other micronutrients. The significant implication is that many children who are at risk of developing blindness due to Vitamin A deficiency in Africa will have their eyesight spared as Sorghum is a staple food. Sorghum is therefore a functional food with several health benefits including some that may include cholesterol lowering and blood sugar lowering.
